Marry me chicken with sun-dried tomatoes, spinach and parmesan
Marry me chicken with sun-dried tomatoes, spinach and parmesan in a sauce of stock, cream and milk. A family-friendly one-pan dinner with 43 g of protein per serving.
Cut each chicken breast horizontally into two flat halves and season with salt and pepper.
Fry the chicken in the olive oil over a medium to high heat for 4 min on each side until golden brown. Take it out of the pan.
Chop the garlic and cut the sun-dried tomatoes into strips. Cook both gently in the pan fat for 1 min and sprinkle over the oregano, paprika and chilli flakes.
Pour in the chicken stock, cream and milk and simmer everything for 5 min. Stir in the parmesan over a low heat until the sauce thickens.
Add the spinach and let it wilt, then return the chicken to the sauce. Cook, covered, for 6 to 8 min, until it's no longer pink inside.
Tear the basil over the top and serve the chicken with the sauce.
