Mango chia pudding with coconut yoghurt: a creamy breakfast or dessert with mango, chia seeds and plant milk, gently sweet and pleasantly fresh.
You’ll need: blender · mixing bowl · grater
This is the kind of breakfast that's worth opening the fridge for. Creamy, fresh and gently sweet. It feels just right, especially on warm days.
Maple syrup/honey → mashed ripe banana or date purée (natural sweetness, plus fibre) Toasted desiccated coconut → chopped walnuts or almonds (more unsaturated fats, extra crunch)
Depending on the plant milk, the recipe contains tree nuts (almond or cashew milk), soya (soya milk) or gluten (oat milk, unless labelled gluten-free). For young children, only serve chia seeds well soaked.
Chia seeds mainly provide fibre, alpha-linolenic acid as a plant omega-3 fatty acid, and minerals such as magnesium and calcium. The exact amounts vary slightly depending on origin and processing.
Besides natural fruit sugar, mango also contains vitamin C and carotenoids. The amounts vary with ripeness and variety.
Coconut yoghurt usually contains less protein than yoghurt made from milk or soya, but more fat from coconut.
In some people, larger amounts of chia can cause a feeling of fullness or bloating, especially if they usually eat little fibre. So soak the seeds well and have enough liquid with them.
Both sweeten mainly through sugar; maple syrup contains small amounts of minerals, honey small amounts of other compounds. Nutritionally the difference is fairly small, but the taste is clearly different.
