Ingredients

Method

You’ll need: waffle iron

  1. Preheat the waffle iron and grease it thinly with coconut oil.
  2. Stir the almond flour, eggs, almond milk, cinnamon and coconut oil into a smooth batter.
  3. Stir in the maple syrup until everything is evenly mixed.
  4. Pour the batter into the hot waffle iron in portions and close the lid.
  5. Bake the waffles until golden brown and they come away easily.
  6. Serve the almond and cinnamon waffles warm, plain or with a little extra cinnamon.

Good to know

These waffles are simple, quick and really cosy. They smell warmly of cinnamon and have a rich, nutty texture. Just right when you want something easy.

Swaps

Maple syrup → date paste (adds a little fibre). Almond milk → coconut milk drink from a carton (usually a little creamier). Coconut oil → ghee (provides small amounts of fat-soluble vitamins). Almond flour → hazelnut flour (similarly low in carbs, with its own nutty flavour).

Allergens

Contains egg and almonds, so not suitable for people with an egg or nut allergy. Generally fine for children if they tolerate egg and almonds well; the ingredients are normal during pregnancy, but don't eat the raw batter with egg.
