Ingredients
400 g venison steaks
300 g celeriac
100 g blueberries
2 tbsp olive oil
1 tbsp apple cider vinegar
1 pinch of salt
1 pinch of pepper
Method
You’ll need: frying pan · chopping board · knife
Peel the celeriac and grate it finely. Wash the blueberries carefully and set both aside.
Whisk the olive oil, apple cider vinegar and a little salt into a simple dressing. Gently fold in the celeriac and blueberries.
Let the celeriac salad stand briefly so it softens a little and the flavours come together. Meanwhile, pat the venison steaks dry.
Heat a frying pan with olive oil until very hot and sear the venison steaks on both sides until browned on the outside. Only season them with salt and pepper at the end.
Let the meat rest briefly, then cut it into slices. This keeps more of the juices in the steak.
Arrange the celeriac salad on plates and lay the venison slices on top or alongside. Finish with a little pepper if you like.
Good to know
When you want something a bit special, this dish is just right. Hearty, fresh and clear in flavour. Not much effort, but a really lovely contrast on the plate.
Swaps
Venison steaks → rump steak (similar protein content, strong in flavour); blueberries → pomegranate seeds (also provide plant compounds); celeriac → fennel (fresher and also contains fibre); olive oil → avocado oil (mild in flavour, with lots of unsaturated fats).
Allergens
The recipe is naturally gluten-free and contains no dairy; celery, however, is one of the allergens that must be labelled. It suits children well if the meat is served well cooked; during pregnancy, too, only eat game that is cooked all the way through.
