Ingredients
350g sliced veal
1 courgette
1 clove of garlic
1 bunch of sage
1 lime
1 tbsp olive oil
Method
You’ll need: frying pan · chopping board · knife
Cut the courgette into even slices, squeeze the lime and finely chop the garlic.
Fry the sliced veal in a hot frying pan with the olive oil over a high heat for just 2 min.
Take the meat out and fry the courgette slices in the same fat until browned.
Pick the sage leaves from the stalks and add them to the veg with the garlic.
Return the veal to the pan, deglaze everything with the lime juice and serve straight from the pan.
Good to know
Veal and sage are at the heart of many Italian dishes. Here they're quickly fried together in a simple, low-carb pan dish.
Swaps
Courgette → green asparagus (when it's in season, asparagus fries just as quickly and brings much stronger roasted notes).
Cooking tips
If you fry veal for too long, it turns dry. Be sure to take it out while the veg cooks and only warm it through at the end.
Storage
This is a classic pan dish that tastes best served fresh and doesn't reheat very well.
Allergens
Completely free from gluten, lactose and nuts. In pregnancy, make sure the veal is cooked right through.
