At a glance

Ingredients

Method

You’ll need: frying pan · wok · chopping board · knife · mixing bowl · wooden spoon

  1. Cut the turkey breast into thin strips. Wash the pak choi thoroughly and halve it lengthways.
  2. Stir the peanut butter, soy sauce, lime juice and water in a bowl until you have a smooth, creamy sauce.
  3. Heat the sesame oil in a large frying pan or wok. Fry the turkey strips over a medium to high heat until cooked through and lightly browned.
  4. Add the pak choi and stir-fry briefly so it softens but still has some bite.
  5. Stir in the peanut sauce and let everything bubble briefly until the veg is coated and the sauce thickens slightly.
  6. Arrange the low-carb turkey strips with pak choi on plates and sprinkle with the sesame seeds.

Good to know

When it needs to be quick, I especially like pan dishes like this. Warm, well seasoned and still light. The sauce rounds everything off nicely without feeling heavy.

Swaps

Turkey breast → chicken breast (similar protein content), peanut butter → almond butter (also provides unsaturated fats), soy sauce → tamari (often gluten-free), sesame oil → olive oil (more monounsaturated fats)

Allergens

Contains peanuts, sesame and soya. For children, only serve cut to a suitable size and mildly seasoned; in pregnancy make sure the turkey is cooked through completely. Contains: gluten (soy sauce).
