Ingredients

Method

You’ll need: frying pan · chopping board · knife · grater

  1. Cut the turkey breast into even cubes and thread them onto wooden skewers.
  2. Peel the ginger and grate it finely. Squeeze the lime.
  3. Stir the peanut butter, tamari, ginger and lime juice together to make a smooth marinade.
  4. Brush the turkey skewers all over with the peanut marinade and leave them to stand briefly.
  5. Fry the skewers in a hot frying pan on all sides until the turkey breast is browned outside and completely cooked through inside.
  6. Serve the low-carb turkey and peanut skewers straight from the pan, with a little extra lime juice if you like.

Good to know

When it needs to be quick, I'm especially fond of skewers like these. They're savoury, uncomplicated and have just the right mix of freshness and roasted flavours.

Swaps

Turkey breast → chicken breast (similar protein content and mild); peanut butter → almond butter (also provides unsaturated fatty acids; contains tree nuts); tamari → coconut aminos (usually a little milder and often gluten-free); dry-frying → frying in ghee (heat-stable and full of flavour; contains milk)

Allergens

Contains peanuts and soya (tamari); depending on the brand, tamari may also contain traces of other allergens. For children, only serve well cooked and in an age-appropriate way; in pregnancy too, only eat it fully cooked.
