Low-carb turkey medallions on sweetheart cabbage with mushrooms, olive oil and rosemary: a simple pan dish with lots of veg and a delicate, savoury note.

Ingredients

Method

You’ll need: frying pan · chopping board · knife

  1. Cut the turkey breast into medallions and pat them dry. Roughly strip the rosemary needles from the sprig.
  2. Remove the hard core from the sweetheart cabbage and cut the leaves into wide strips. Trim the mushrooms and quarter them.
  3. Heat some of the olive oil in a large frying pan. Fry the turkey medallions with the rosemary on both sides until golden brown, then take them out of the pan for a moment.
  4. Add the rest of the olive oil to the pan and cook the mushrooms and cabbage over a medium heat. Season with sea salt and toss everything until the sweetheart cabbage wilts slightly.
  5. Return the turkey medallions to the pan and heat everything together until the turkey is cooked through. This brings the pan juices, rosemary and veg together.
  6. Arrange the sweetheart cabbage and mushrooms on plates and top with the turkey medallions. Serve hot straight away.

Good to know

I especially like a dish like this on long days: little effort, lots of flavour. It's light, warm and pleasantly uncomplicated.

Swaps

Turkey breast → chicken breast (similar protein content); mushrooms → oyster mushrooms (also contain fibre); sweetheart cabbage → savoy cabbage (stronger flavour, also contains fibre); olive oil → ghee (heat-stable; contains milk)

Allergens

The dish is naturally gluten-free and dairy-free; the main thing to watch is a mushroom intolerance. It's mild for children, and in pregnancy it's fine as long as the turkey is cooked right through and the mushrooms are carefully trimmed and wiped.
