Ingredients
400g turkey mince
300g okra
2 onions
2 tbsp olive oil
1 tsp cumin
1 pinch of salt
1 pinch of pepper
Method
You’ll need: frying pan · chopping board · knife
Wash the okra, remove the fibrous stalk ends and slice into rings. Peel the onions and dice them finely.
Mix the turkey mince with the cumin, salt and pepper. Shape into small meatballs.
Heat the olive oil in a frying pan and fry the turkey meatballs on all sides until browned and cooked through. Then take them out of the pan for a moment.
Fry the onions in the pan juices until translucent. Add the okra and cook everything over a high heat until the vegetables are soft and lightly browned.
Return the meatballs to the pan and fold them into the vegetables. Heat everything through briefly and season to taste with salt and pepper.
Serve the low-carb turkey meatballs with okra straight from the pan, ideally piping hot.
Good to know
When it needs to be quick but still taste good, this pan dish is just right. Hearty, simple and not too heavy.
Swaps
Turkey mince → chicken mince (similar protein content, mild flavour); okra → courgette (milder, juicy); olive oil → ghee (heat-stable and full of flavour; contains milk); cumin → turmeric (adds yellow plant pigments)
Allergens
Naturally free from gluten, egg and milk. Onions don't suit every sensitive stomach. The mild seasoning is easy to adapt for children, and in pregnancy it's fine as long as the turkey mince is cooked right through.
