Method

You’ll need: frying pan · chopping board · knife · wooden spoon · meal prep containers

  1. Peel the onion, garlic and ginger and finely chop everything. Mix half of it with the turkey mince, egg, cumin and salt.
  2. With damp hands, shape the mixture into about 20 balls and brown them all over in the coconut oil in a large frying pan for 6 min. Take them out.
  3. Soften the rest of the onion mixture in the fat left in the pan for 2 min and stir in the curry powder and turmeric for 1 min.
  4. Cut the cauliflower into small florets and dice the peppers. Add both to the pan with the passata, coconut milk and stock.
  5. Add the meatballs, cover and simmer the curry for 12 min, until the cauliflower is tender-crisp and the meatballs are cooked through.
  6. Scatter with chopped coriander and divide the curry between four containers. It keeps in the fridge for 3 days.

Good to know

Meatballs in a curry stay juicy when reheated, because they sit in the sauce. Cauliflower takes the place of rice here and soaks up the spices. A dinner that divides neatly into four containers.

Swaps
