At a glance Serves 2 Prep time: 10 min No cooking needed Total time: 10 min Calories: 280 kcal per serving Protein: 28 g Fat: 16 g Carbs: 6 g Ingredients 2 cucumbers 2 tins of tuna (in its own juice, drained) 1 avocado 1 unwaxed lemon (juice) 1 tbsp capers 1 pinch of salt 1 pinch of pepper 1 pinch of chilli flakes Method You’ll need: chopping board · knife · mixing bowl
Halve the cucumbers lengthways and carefully scoop out the soft centre with a spoon to make sturdy boats. Scoop the avocado out of its skin and mash it in a bowl with a fork until creamy. Mix in the lemon juice straight away. Add the drained tuna and the capers to the avocado and stir everything together thoroughly. Season to taste with salt, pepper and chilli flakes. Spoon the tuna and avocado cream evenly into the cucumber halves and press down lightly so it holds well. If you like, finish with a little more pepper or a little lemon juice. Good to know When things need to be quick, I especially like recipes like this. Fresh, simple and nicely satisfying.
Swaps Capers → finely chopped olives (also contain unsaturated fats). Lemon → lime (similarly fresh, with vitamin C).
Allergens Contains fish from the tuna; for children, serve only mildly seasoned, and during pregnancy make sure the tuna is fresh and well chilled, and keep fish to the usual amounts overall.
