Good to know
Smoked trout is an often underrated fine fish. Its salty note goes spectacularly well with the sweetness of a fresh apple.
Swaps
Lamb's lettuce → spinach (young leaf spinach has a bit more bite and adds more volume to the flat plate).
Cooking tips
Only cut the apple at the very end, as it quickly turns brown in the air. Otherwise, a little lemon juice stops it discolouring.
Storage
Unopened in its vacuum pack, the trout fillet often keeps in the fridge for weeks without any problem.
Allergens
Contains fish and mustard; free from gluten, lactose and nuts. Smoked fish: avoid in pregnancy.
