Ingredients

Method

You’ll need: frying pan · chopping board · knife · wooden spoon

  1. Prepare the sweetheart cabbage: remove the outer leaves, halve the cabbage, cut out the core and slice into fine strips. Peel the onion and dice it finely.
  2. Heat the olive oil in a large frying pan. Add the onion and beef mince and fry over a high heat for 5–7 min until the mince is crumbly.
  3. Keep frying the beef mince, breaking it up, until it's nicely browned. Stir in the tomato purée and toast it briefly until it darkens and smells more aromatic.
  4. Add the sweetheart cabbage to the pan and salt it. Put the lid on and cook until the cabbage wilts and softens.
  5. Mix everything thoroughly and fry briefly with the lid off until the pan is juicy but not watery.
  6. Serve hot, or leave to cool and pack into boxes for meal prep.

Good to know

This is uncomplicated cooking: little effort, lots of flavour, one pan. Hearty, juicy and just right for days when things should be easy.

Swaps

Beef mince → turkey mince (milder flavour, still plenty of protein); olive oil → ghee (heat-stable for searing); sweetheart cabbage → white cabbage (more bite, also provides fibre); tomato purée → unsweetened red pepper paste (milder, depending on the product with a similar share of veg).

Allergens

The dish is naturally gluten-free and dairy-free, as long as only olive oil is used. Onion can quickly be too intense for sensitive children or people with a sensitive stomach; in pregnancy the ingredients are unproblematic when everything is cooked through completely.
