Low-carb sweetheart cabbage and beef mince bake
Low-carb sweetheart cabbage and beef mince bake with beef mince, sweetheart cabbage, egg and mozzarella: a hearty oven classic with plenty of protein and few carbs.
Preheat the oven to 180 °C (160 °C fan) and grease a baking dish with butter.
Remove the stalk from the sweetheart cabbage and cut it into thin strips. Peel the onion and dice it finely.
Fry the beef mince in a hot frying pan until it takes on colour. Briefly fry the onion with it and season everything with salt, pepper and sweet paprika.
Soften the sweetheart cabbage in the same pan for a few minutes until it softens and wilts a little.
Layer the sweetheart cabbage and mince in the dish. Whisk the egg with the almond milk, salt and pepper, pour it over and spread the mozzarella on top. Bake at 180 °C for 20–25 minutes until the cheese has melted and turned golden brown.
Leave to rest briefly and serve warm.
Good to know
A bake like this is no fuss and tastes like real everyday food. Juicy, well seasoned and just the thing when you want something warm and straightforward.
Swaps
Beef mince → chicken mince (usually a little leaner, also plenty of protein); mozzarella → baked sheep's cheese (more calcium, stronger flavour); almond milk → the thick cream from coconut milk (creamier, a few fewer additives depending on the product); butter → ghee (pure butterfat, can be heated to high temperatures)
Allergens
Contains egg, milk and tree nuts (almond milk). Usually well suited to children if mildly seasoned, and unproblematic during pregnancy with fully cooked mince and pasteurised mozzarella. Contains: tree nuts.
