Ingredients

Method

You’ll need: chopping board · knife · whisk

  1. Wash the strawberries, remove the green tops and cut into small dice.
  2. Whisk the mascarpone, low-fat quark and coconut sugar into a smooth cream.
  3. Mix the ground almonds with the cooled espresso until you have a moist, crumbly base.
  4. Layer the espresso almonds, strawberries and mascarpone cream alternately in glasses.
  5. Repeat the layers until the glasses are full, finishing with the cream.
  6. To serve, dust the dessert with a little cocoa, or chill it briefly so it can set a little.

Good to know

When you want something creamy, fruity and a little coffee-flavoured, this dessert in a glass is just right. It's like a small after-work tiramisu, just fresher and fruitier.

Swaps

Less sweet: halve the coconut sugar and round off with cinnamon, vanilla or a few berries | low-fat quark → natural Greek yoghurt (milder flavour, also contains protein) | mascarpone → ricotta (also contains protein) | ground almonds → ground hazelnuts (with fibre and unsaturated fatty acids)

Allergens

Contains milk and tree nuts. Because of the espresso and cocoa, better in an adapted form for young children; in pregnancy, use pasteurised dairy products and limit caffeine, as the NHS advises.
