Low-carb spinach salmon roll
Low-carb spinach salmon roll with baby spinach, eggs, smoked salmon, cottage cheese and horseradish – plenty of protein, quick to make and pleasantly light.
Wash the baby spinach thoroughly and squeeze it out well. Blend with the eggs, salt and pepper until you have a smooth green mixture.
Pour the spinach and egg mixture onto a baking tray lined with baking paper and spread it out evenly. Bake in the preheated oven at 180 °C (160 °C fan) for 10–12 min, until the base is set and lightly coloured.
Let the spinach base cool on the paper. Stir the cottage cheese with the horseradish and spread it evenly over the base.
Arrange the smoked salmon on top and roll the base up tightly from the long side. Wrap in cling film or baking paper and chill briefly so the roll is easier to slice.
Cut into slices and serve well chilled. A small salad with olive oil and lemon juice goes well with it.
Good to know
This is the kind of recipe I especially love: quick to make and still really pretty on the plate. The roll is juicy and well seasoned, and looks a little more special than the effort it actually takes.
Swaps
Cottage cheese → goat's milk cream cheese (often stronger in flavour, similar protein content). Smoked salmon → cooked wild salmon (less salt, also plenty of protein). Horseradish → Dijon mustard without added sugar (spicy, usually milder). Baby spinach → chard (also provides folate and green plant compounds).
Allergens
Contains egg, fish and milk. Good for children when cut into thin slices; during pregnancy, cold-smoked salmon is only advised cooked until steaming hot – this roll is served chilled, so use cooked salmon instead.
