Ingredients

Method

You’ll need: frying pan · wooden spoon

  1. Rinse the konjac or shirataki noodles thoroughly under cold water. Then heat them in a hot frying pan without any fat until the excess liquid has evaporated.
  2. Turn down the heat and add the processed cheese. Stir in the mustard, turmeric and a little garlic salt until everything melts evenly.
  3. Stir in a splash of almond milk to make the sauce creamier. If it is too thick, work in a little hot water and stir until smooth.
  4. Fold in the jalapeño slices and warm them through briefly. Mix everything well so the heat and cheese sauce are evenly distributed.
  5. Taste once more and check the consistency. The sauce should cling softly and creamily to the noodles.
  6. Serve straight away, while the mac and cheese is still hot and extra creamy.

Good to know

When you want something creamy and spicy, this dish is on the table fast. Filling, uncomplicated and with real mac-and-cheese vibes.

Swaps

Processed cheese → cream cheese from grass-fed milk (often a shorter ingredient list, a little more protein). Almond milk → unsweetened coconut milk in a carton (creamier, unsweetened). Jalapeños → finely diced red pepper (milder, with vitamin C). Hot mustard → Dijon mustard made without sugar (usually simple ingredients).

Allergens

Contains milk, mustard and tree nuts (almonds in the almond milk). Because of the heat, only suitable for children in a mild version; during pregnancy, pasteurised dairy products and well-heated ingredients are the safe choice. Contains: tree nuts.

Frequently asked questions

What do konjac or shirataki noodles contain nutritionally?

They consist mainly of water and the soluble fibre glucomannan. They usually provide hardly any significant amounts of vitamins or minerals.

Which nutrients does processed cheese provide in this recipe?

Processed cheese contains protein, milk fat, calcium and phosphorus. Depending on the product, there are also emulsifying salts and a higher sodium content.

Is turmeric nutritionally relevant here?

Turmeric provides curcuminoids and some manganese, but it is only used in a small amount in this recipe. Its nutritional contribution is therefore more of an extra than a major one.

Can everyone handle jalapeños?

That depends very much on the person. Capsaicin suits some people, but it can be unpleasant with a sensitive stomach, reflux or irritated mucous membranes.

What matters about mustard in terms of ingredients?

Mustard contains mustard oil glycosides and, depending on the type, vinegar, salt and spices. It is one of the allergens that must be declared and can be irritating for sensitive people.
