Ingredients
1 cucumber
150g smoked salmon
100g cream cheese
1 bunch of dill
1 splash of lemon juice
Method
You’ll need: chopping board · knife · mandoline
Wash the cucumber thoroughly and slice it lengthways into wide, thin strips with a vegetable peeler or mandoline.
Lay the cucumber strips side by side on a board and pat them lightly dry with kitchen paper.
Spread each strip thinly with cream cheese and drizzle with a few drops of lemon juice.
Pick the dill from the stalks, scatter it over the cream cheese and lay a small slice of smoked salmon on each strip.
Roll up the cucumber strips tightly and serve the rolls straight away as a snack.
Good to know
Expecting guests or looking for an elegant snack for yourself? These little cucumber rolls look like sushi, but they're completely low-carb and made in no time.
Swaps
Smoked salmon → smoked trout (if you prefer a slightly milder, more local alternative to salmon).
Cooking tips
Use the firm flesh of the cucumber for the strips. The watery core in the middle doesn't roll well.
Storage
Only roll up the salmon shortly before eating, as the cucumber releases water very quickly and the rolls would otherwise go soft.
Allergens
Contains fish and milk (cream cheese); gluten-free, nut-free. Smoked salmon: avoid in pregnancy.
