Low-carb red cabbage with orange, cinnamon and walnuts
Low-carb red cabbage braised in butter with orange, cinnamon, cloves and apple cider vinegar, sprinkled with walnuts and made without adding any sugar. A side for festive meals with 16.5 g carbs.
Quarter the red cabbage, remove the core and cut it into thin strips. Dice the onion.
Soften the onion in the butter until translucent, add the red cabbage and fry, stirring, for 5 minutes.
Grate the orange zest and squeeze out the juice, then add both to the cabbage with the apple cider vinegar, cinnamon stick, cloves, bay leaf, salt and 100 ml water.
Braise the red cabbage, covered, over a low heat for 40 minutes, stirring occasionally. Remove the cinnamon stick, cloves and bay leaf.
Toast the walnuts in a dry frying pan and roughly chop them.
Season the red cabbage to taste with salt and vinegar and serve sprinkled with the walnuts.
Good to know
A festive meal needs red cabbage as much as it needs candles on the table. This version tastes of orange and cinnamon and gets by without added sugar or redcurrant jelly.
Swaps
Butter → olive oil (vegan) or ghee (contains milk). Orange → apple, but then it's no longer low-carb. Walnuts → chestnuts (more Christmassy). Apple cider vinegar → red wine vinegar.
Cooking tips
Red cabbage tastes better cooked the day before, because the spices have time to infuse. Only sprinkle the walnuts over just before serving so they don't go soft.
