Ingredients

Method

You’ll need: saucepan · waffle iron

  1. Whisk the eggs with the low-fat quark and melted coconut oil until smooth. Work in the ground almonds until you have a thick, even waffle batter.
  2. Preheat the waffle iron well and grease the plates thinly with coconut oil or a little ghee. That way the waffles come away more easily later.
  3. Add the batter to the hot waffle iron in portions and cook until the waffles are firm and golden brown on the outside. Depending on the machine, this only takes a few minutes.
  4. Put the finished waffles on a rack for a moment. That way the outside stays a little crisper.
  5. Warm the morello cherries slowly in a small pan over a low heat. Don't let them boil hard, so their flavour and texture are kept.
  6. Spoon the warm cherries over the quark waffles and serve straight away.

Good to know

When you fancy something sweet, these waffles are a very good answer. Lightly golden on the outside, soft inside – and simply well rounded with the warm cherries.

Swaps

Low-fat quark → natural Greek yoghurt (a little creamier, also provides protein). Ground almonds → ground hazelnuts (similar texture, also with fibre). Coconut oil → ghee (heat-stable and aromatic). Morello cherries → blueberries (also with fibre and natural plant compounds).

Allergens

Contains milk, egg and tree nuts. Usually suits children if they tolerate nuts, and generally fine in pregnancy as long as the eggs are cooked through and the ingredients are prepared fresh.
