Ingredients
4 eggs
250g low-fat quark
40g almonds, ground
1/2 tsp vanilla powder
1 tbsp butter
250g blackberries
1 tsp baking powder
1 tsp cinnamon
1 pinch of salt
Method
You’ll need: frying pan · saucepan · spatula
Separate the eggs. Stir the egg yolks, low-fat quark, almonds, baking powder, cinnamon, vanilla powder and salt until smooth.
Whisk the egg whites until stiff and fold them into the quark mixture.
Melt half the butter in a large non-stick frying pan, pour in the batter and let it set, covered, over a medium heat for 6 min, until the underside is golden brown.
Cut the pancake into quarters with a spatula and turn them. Add the remaining butter, fry everything for another 3 min and tear the pancake into pieces with two forks.
Warm the blackberries in a small pan for 3 min, until they release their juice.
Divide the Schmarrn between two plates and spoon the warm blackberries over the top.
Good to know
Kaiserschmarrn for breakfast, with quark and ground almonds instead of flour. The whisked egg whites make it fluffy. The warm blackberries bring sourness and sweetness at once.
