Cut the courgettes lengthways into thin slices. If you like, salt them lightly and leave them for a moment, then pat them dry.
Finely chop the garlic and fry the beef mince in a frying pan until browned and cooked through. Stir in the tomatoes and garlic, season with salt and let it reduce briefly.
Put a little of the tomato sauce in the baking dish. Then layer the courgette, meat sauce and cottage cheese alternately.
Finish with a layer of courgette and a little cottage cheese. Bake the lasagne at 180 °C (160 °C fan) for 30–35 min, until the top browns slightly and everything is piping hot.
Let it rest briefly before cutting. That way the lasagne holds together better when you serve it.
Serve warm. A green salad with olive oil goes well with it.
Good to know
When you fancy something hearty that doesn't feel heavy, this lasagne fits the bill. It's uncomplicated, warm and just right for a relaxed evening.
Swaps
Beef mince → turkey mince (similar protein content); cottage cheese → ricotta (milder in flavour, also provides protein and calcium); courgette → aubergine (also provides fibre, a stronger roasted flavour); tinned tomatoes → chopped tomatoes in a jar (unsweetened; often a little more intense in flavour)
Allergens
Contains milk (cottage cheese); good for many children if the garlic is kept mild, and generally fine in pregnancy with the beef mince cooked right through and pasteurised cottage cheese.
