Wash and peel the kohlrabi and cut it into sticks that are as even as possible, so they cook evenly.
In a large bowl, toss the kohlrabi sticks thoroughly with the olive oil, smoked paprika and coarse sea salt.
Add the ground almonds and mix again until the kohlrabi sticks are lightly coated.
Preheat the oven to 200 °C (180 °C fan) and line a baking tray with baking paper. Spread the kohlrabi sticks out loosely so they roast rather than steam.
Bake the kohlrabi fries at 200 °C for 20–25 min, turning them halfway, until golden brown and slightly crisp at the edges.
Leave to cool briefly and serve warm, ideally with a yoghurt or herb dip.
Good to know
When you fancy something savoury from the oven, these kohlrabi fries are a really good idea. Spicy outside, tender inside – and nice and easy.
Swaps
Olive oil → avocado oil (stable at high heat and mild); smoked paprika → curry powder (different spice, depending on the blend with turmeric and coriander); yoghurt dip → herb quark made with full-fat milk (more protein, creamy texture).
Allergens
Contains tree nuts from the almonds. For children, bake them soft enough and cut them into age-appropriate pieces; during pregnancy, the ingredients are unremarkable with normal kitchen hygiene.
