Preheat the oven to 200 °C (180 °C fan) and line a baking tray with baking paper. Pat the chicken dry.
Rub the chicken with olive oil, oregano, paprika, salt and pepper. Leave briefly so the spices stick well.
Place the chicken on the tray and spread the cherry tomatoes, artichoke hearts, Kalamata olives and crushed garlic around it. Halve the lemon and add it to the tray.
Drizzle everything with a little olive oil and bake at 200 °C for 20–25 min until the chicken is cooked through and browned in places. The tomatoes may burst slightly.
Take the tray out of the oven briefly and crumble the feta over it. Leave for a moment so it softens slightly.
To serve, squeeze the roasted lemon over the tray and enjoy everything piping hot.
Good to know
A traybake like this makes the evening easier. Little effort, lots of flavour, and in the end everything lands warm and juicy straight on the table.
Swaps
Feta → goat's cheese (similar protein content, often a little stronger in flavour); chicken thighs → chicken breast (less fat, plenty of protein); artichoke hearts → courgette (milder, juicy and contains fibre); Kalamata olives → green olives (similar fats, a little more bitter and saltier).
Allergens
Contains milk (feta); suitable for children if the olives are checked for stones and the dish is mildly seasoned; fine during pregnancy if the chicken is cooked all the way through and pasteurised feta is used.
