Ingredients
200ml cream
200g mascarpone
100g berries
1 tbsp maple syrup
1 tsp vanilla extract
Method
You’ll need: saucepan · wooden spoon
Warm the cream with the vanilla extract and maple syrup in a small saucepan over a low heat. The mixture should get hot but not boil hard.
Take the pan off the heat and let the cream cool briefly. Then stir in the mascarpone thoroughly until the cream is completely smooth.
Divide the mixture between small glasses or moulds. Smooth the surface if needed.
Put the panna cotta in the fridge until it's well chilled and set. This takes several hours.
Wash the berries gently and pat them dry. That way they won't water down the cream later.
To serve, top the chilled panna cotta with the berries and enjoy it cold straight away.
Good to know
A dessert like this often looks like more work than it is. The texture is rich and creamy, and the berries bring freshness. Just right when you want something simple and good.
Swaps
Less sweet: halve the maple syrup and round it off with cinnamon, vanilla or a few berries | Mascarpone → full-fat Greek yoghurt (also provides protein) | Berries → raspberries or blackberries (also provide fibre) | Vanilla extract → vanilla pod (no additives, an aromatic flavour)
Allergens
Contains milk and is quite rich because of the cream; suitable for children in small portions, and fine in pregnancy if you use pasteurised dairy and carefully washed berries.
