Good to know
Soufflé is often seen as tricky. But with low-fat quark and stiffly whisked egg whites, this fluffy little wonder almost makes itself.
Swaps
Unwaxed lime → unwaxed lemon (works exactly the same and gives a lovely flavour).
Cooking tips
Never open the oven door while it's baking! The cold draught makes the delicate soufflé collapse instantly.
Storage
Must be served hot straight after baking. It won't hold if left to stand.
Allergens
Contains egg and milk (lactose).
