Ingredients

Method

You’ll need: oven · baking tray · grater

  1. Beat the softened butter with the honey and egg until creamy and finely grate in the orange zest.
  2. Mix the ground hazelnuts and almonds with the cinnamon, baking powder and salt and knead everything together with the butter mixture.
  3. Shape 30 walnut-sized balls, place them on a baking tray lined with baking paper and flatten them with a fork.
  4. Bake the cookies in a preheated oven at 170 °C (150 °C fan) for 12 to 14 minutes, until the edges are browned.
  5. Leave them to cool on the tray, because they're still soft and fragile while warm.

Good to know

If you're watching carbs at cookie time, you usually end up with dry stand-in cookies. These cookies are crisp outside, nutty and soft inside, and taste of orange.

Swaps

Honey → maple syrup. Butter → coconut oil. Orange zest → lemon zest (fresher). Hazelnuts → ground walnuts (more bitter).

Cooking tips

Hazelnuts you grind and toast yourself give more flavour. The dough is soft, so it's easier to shape the balls with slightly damp hands.

Storage

Keeps for 2 weeks in a cookie tin.

Allergens

Contains hazelnuts, almonds (tree nuts), milk and egg; no honey for children under one year old, and fine in pregnancy.
