Ingredients

Method

You’ll need: frying pan · chopping board · knife

  1. Carefully peel the grapefruit and cut the flesh out into segments. Catch the juice as you go.
  2. Trim the fennel and slice or shave it very thinly. Mix it with the grapefruit juice, lemon juice, part of the olive oil, salt and pepper, and briefly knead it until soft.
  3. Halve the Kalamata olives and pick the dill. Fold both into the fennel salad together with the grapefruit segments.
  4. Heat the remaining olive oil in a frying pan and fry the cod on both sides until cooked and it flakes easily. Season with salt and pepper.
  5. Let the fish rest briefly so it stays juicy. Season the salad again with lemon juice, salt and pepper if needed.
  6. Arrange the grapefruit and fennel salad on plates and place the pan-fried cod on top. A little dill to serve makes it look especially nice.

Good to know

A plate like this is simple and special at the same time. The salad is fresh and bitter-sweet, while the cod stays mild and juicy. Just right when you want something light with character.

Swaps

Cod → coley (similar protein content, usually a bit cheaper) | grapefruit → orange (milder, also with vitamin C) | Kalamata olives → avocado (more monounsaturated fats, less salt) | dill → parsley (a little more vitamin K and a fresh, green flavour)

Allergens

Contains fish; citrus fruit can irritate sensitive people. Suits children well if the fish is served free of bones; in pregnancy the dish is unproblematic with cod that's cooked through completely.
