Ingredients
- 400g watermelon
- 150g feta
- 1 bunch of mint
- 2 tbsp olive oil
- 1 tbsp lime juice
- 1 pinch of pepper
Method
You’ll need: chopping board · knife · mixing bowl · sieve
- Cut the watermelon into bite-sized cubes of about two centimetres, removing any seeds as you go.
- Drain the feta well and break it into rough pieces with your hands.
- Wash the mint, shake it dry and pick the leaves off the stalks.
- In a small bowl, whisk the olive oil with the lime juice and a little black pepper into a dressing. Thanks to the feta, you usually won't need salt.
- Toss the watermelon cubes with the feta and mint in a large bowl and fold in the dressing just before serving.
Good to know
Salty cheese with sweet, juicy melon sounds unusual, but it's a huge summer hit around the Mediterranean.
Swaps
Feta → soft goat's cheese (for a milder, creamier version).
Cooking tips
Really do mix in the dressing at the last minute, otherwise the melon draws out a lot of water.
Storage
This salad needs to be eaten straight away and doesn't keep.
Allergens
Contains milk (lactose in the feta).
