Ingredients

Method

You’ll need: frying pan · chopping board · knife

  1. Thinly slice the cooked duck breast and warm it in a dry frying pan for 1 minute.
  2. Peel the oranges with a knife, removing the pith, and cut out the segments, catching the juice as you go.
  3. Whisk the orange juice with the mustard, cider vinegar, olive oil, salt and pepper into a dressing.
  4. Toast the walnuts in a dry frying pan for 3 minutes and roughly chop them. Wash the lamb's lettuce and cut the chicory into strips.
  5. Toss the lamb's lettuce, chicory and orange segments with the dressing, divide everything between two plates and top with the duck and walnuts.

Good to know

If there's duck left over from Christmas dinner, it becomes a salad the next day. Orange and lamb's lettuce go with duck as well as red cabbage does. You make the dressing from the juice that drips off as you cut the segments.

Swaps

Duck breast → goose breast or leftover roast turkey. Lamb's lettuce → rocket. Walnuts → pecans. Chicory → radicchio.
