Ingredients

Method

You’ll need: frying pan · spiralizer · chopping board · knife

  1. Wash the courgettes, trim the ends and turn them into courgetti with a spiralizer. Halve the cherry tomatoes, peel the garlic and crush it finely.
  2. Heat the olive oil in a large frying pan. Briefly fry the garlic and prawns over a high heat until the prawns are pink and only just cooked.
  3. Add the cherry tomatoes to the pan and fry briefly until they soften slightly and release some juice.
  4. Turn the heat down a little and add the courgette noodles. Toss everything only briefly so the courgetti soften but still have some bite.
  5. Season to taste with salt and turn off the hob. Roughly tear the basil and fold it in or scatter it over the top.
  6. Serve straight away, while the prawns are juicy and the courgetti are still nice and fresh.

Good to know

When you need something quick, this dish is just right. It's light and juicy but still full of flavour. Especially lovely on warm days or in the evening when you want something easy.

Swaps

Courgette → konjac noodles (far fewer carbs, made mostly of fibre); cherry tomatoes → peppers (more vitamin C); olive oil → avocado oil (heat-stable and mainly monounsaturated fats)

Allergens

Prawns are crustaceans and a common allergen. For children, only serve them well cooked and cut to a suitable size; in pregnancy, only use prawns that are cooked all the way through.
