Low-carb cod on roast squash with sage butter
Low-carb traybake cod with roast squash and Brussels sprouts, topped with brown sage butter with hazelnuts and lemon. A dinner with 17 g of carbs and 33 g of protein.
Preheat the oven to 200 °C (180 °C fan). Cut the Hokkaido squash, skin on, into wedges and halve the Brussels sprouts.
Toss the veg with the olive oil, salt and pepper and roast on a baking tray at 200 °C for 15 minutes.
Pat the cod dry, salt it and lay it between the veg. Bake everything for a further 10 to 12 minutes, until the fish is no longer translucent.
Roughly chop the hazelnuts. Melt the butter in a frying pan and fry the sage and hazelnuts in it for 3 minutes, until the butter smells nutty.
Grate a little lemon zest into the sage butter and add a squeeze of lemon juice.
Divide the squash, sprouts and cod between plates and pour the sage butter over the top.
Good to know
Here the cod cooks on the same tray as the squash and Brussels sprouts. At the end, brown butter with sage and hazelnuts goes over the top. An autumn dinner with little washing-up and few carbs.
Thick pieces of fillet need 2 minutes longer; the fish is done when it flakes apart with a fork. Take the butter off the heat as soon as it's light brown.
