Cook the peas in salted water until soft, then drain well.
Blend the peas with the cream to a smooth, creamy purée. Season to taste with nutmeg and finely chopped mint.
Pat the cod fillets dry and salt them on both sides.
Melt the butter in a non-stick frying pan and fry the cod over a medium heat until lightly browned on the outside and juicy inside.
If needed, briefly warm the pea purée again and stir until smooth.
Spoon the pea purée onto plates, place the cod on top and serve straight away.
Good to know
A plate like this looks simple and still has something special about it. Soft, fresh and pleasantly mild in flavour.
Swaps
Cod → coley (similar protein content, usually slightly leaner). Cream → coconut milk (works for a dairy-free version and provides fat). Butter → ghee (rich buttery flavour, almost no lactose). Peas → cauliflower (far fewer carbs, milder flavour).
Allergens
Contains fish and milk. Suitable for children if you check the fish carefully for bones, and usually no problem during pregnancy as long as the cod is served fully cooked.
