Ingredients

Method

You’ll need: chopping board · knife · jar with lid

  1. Stir the low-fat quark and almond milk together until smooth.
  2. Stir in the ground linseed, chia seeds, cinnamon and vanilla powder.
  3. Roughly chop the almonds and fold in half of them.
  4. Divide the muesli between two jars, top with the blueberries, seal and leave in the fridge overnight.
  5. In the morning, scatter over the remaining almonds.

Good to know

Overnight muesli without oats: linseed and chia seeds swell in the quark overnight. Frozen blueberries thaw as they sit and colour the top layer. The only sweetness comes from the berries and cinnamon.

Swaps

Low-fat quark → skyr. Blueberries → raspberries (fewer carbs). Almonds → walnuts. Almond milk → milk (more protein, slightly more carbs).

Cooking tips

Frozen blueberries work better here than fresh, as their juice soaks into the quark overnight. If you're pregnant, or making it for children or older people, boil frozen berries for 2 minutes first and let them cool. If the muesli is too thick in the morning, stir in a splash of almond milk.

Storage

Sealed, the muesli keeps for 3 days in the fridge; scatter over the almonds only in the morning.

Allergens

Gluten-free, egg-free; contains milk and almonds (tree nuts). Suitable for children.
