Ingredients

Method

  1. Mix the almond flour with some of the coconut oil and the honey to a smooth, mouldable dough. Press the dough together briefly until it binds evenly.
  2. Roll the dough out between two sheets of baking paper and cut it into even rectangles. Chill the pieces briefly so they firm up.
  3. Stir the remaining coconut oil, cocoa powder and maple syrup into a smooth chocolate cream. It should be spreadable but not too runny.
  4. Lay out half of the cookie rectangles and put a little chocolate cream in the middle of each. Place the remaining rectangles on top and press them on gently.
  5. Chill the sandwiches again until the filling sets slightly and the cookies are firm. That way you can pick them up without a mess.
  6. Serve straight from the fridge, dusted with a little cocoa powder if you like. Black coffee or an unsweetened espresso goes well with them.

Good to know

When you want something chocolatey but not heavy, this cookie sandwich is just right. The texture is soft, cool and pleasantly crumbly. A small dessert that's quick to make.

Swaps

Honey → date paste (also provides fibre and minerals) | Less sweet: halve the honey and maple syrup and round it off with cinnamon, vanilla or a few berries | Almond flour → hazelnut flour (similar texture, naturally contains fibre and vitamin E) | Coconut oil → ghee (a different fat, heat-stable and especially aromatic; contains milk)

Allergens

Contains tree nuts and, depending on how the ingredients are produced, traces of other allergens; for children only in small, age-appropriate portions because of the sweetness and firm texture (no honey for babies under one year old), and fine in pregnancy in normal dessert portions.
