Ingredients

Method

You’ll need: blender · chopping board · knife · sieve

  1. Wash the celery, cucumber, green apple and ginger thoroughly. Remove any limp ends and cut everything into rough pieces.
  2. Core the green apple and put it in the blender with the celery, cucumber and ginger. Peel the ginger first if you like.
  3. Blend everything until it's as smooth as possible. For a thinner juice, add a small splash of water if needed.
  4. If you prefer it clearer, pour the mixture through a fine sieve or a cloth. This makes the juice thinner and less fibrous.
  5. Taste briefly and judge how hot the ginger is. If you have a sensitive stomach, keep it mild.
  6. Pour into a glass and serve straight away.

Good to know

Sometimes a simple, fresh glass is just what you want. This juice tastes crisp, slightly spicy and pleasantly green. Lovely when you want something unfussy.

Swaps

Green apple → lemon (less sugar, fresh flavour) Green apple → 1/4 avocado (less sugar, creamier, more monounsaturated fats) Cucumber → courgette (similarly mild, a little more fibre) Ginger → fresh mint (milder, refreshing, hardly any calories)

Allergens

Celery is one of the allergens that must be labelled; please avoid it if you have a celery allergy. For children, keep the ginger very mild; during pregnancy a normal kitchen amount of ginger is usually fine, but if in doubt check with your midwife or doctor.

Frequently asked questions

Is celery a common allergen in drinks?

Yes, celery is one of the allergens that must be labelled and can cause strong reactions in sensitive people. Even small amounts can matter.

Which nutrients are mainly in cucumber and celery?

Both are largely water and provide potassium, among others. They also contain smaller amounts of vitamin K and other vitamins and minerals.

What does green apple add to a juice like this, nutritionally?

Green apple brings natural fruit acids, a little vitamin C and plant compounds such as polyphenols. Some of these sit just under the skin.

Does ginger agree with everyone?

Not always. Its heat can be unpleasant if you have a sensitive stomach or reflux, so go easy on the amount.

Does the fibre stay in this juice?

In the blender, yes at first, because the whole plant is processed. If you then sieve the juice, part of the fibre is lost.
