Ingredients

Method

You’ll need: frying pan · chopping board · knife · mixing bowl · sieve · grater

  1. Blanch the broccoli briefly in boiling water, refresh in cold water and drain very well. Then chop finely.
  2. Squeeze the chopped broccoli out thoroughly in a clean tea towel and put it into a bowl. This makes the mixture easier to shape later.
  3. Add the mozzarella, egg, almond flour and finely chopped garlic to the broccoli. Season with salt and pepper and mix everything into a firm mixture.
  4. Shape small patties with slightly damp hands. If the mixture still seems too soft, leave it to stand briefly.
  5. Fry the patties in a little olive oil or ghee in a non-stick frying pan over a medium heat until golden brown on both sides and crisp outside.
  6. Serve fresh, ideally straight from the pan. A herb quark or a green salad goes well with them.

Good to know

When you want something golden brown outside and juicy inside, these patties are just right. Quick to make, pleasantly savoury and on the plate without much effort.

Swaps

Mozzarella → grated Alpine cheese such as Gruyère (a stronger flavour, also contains calcium); almond flour → finely ground hazelnuts (also provide fat and fibre); garlic → chives (milder); olive oil → ghee (heat-stable, only traces of lactose).

Allergens

Contains egg, milk and almonds (tree nuts). Good for children if the patties are fried until soft enough; in pregnancy, no problem with fresh ingredients prepared hygienically – fry until the egg is fully cooked.
