You’ll need: saucepan · chopping board · knife

  1. Wash the carrots thoroughly and cut them into thick slices. Cut the celery into pieces, dice the red onion and lightly crush the garlic.
  2. Heat the ghee in a heavy pan and brown the onion, carrots and celery for a few minutes until they take on some colour.
  3. Add the garlic and let it cook briefly, without letting it turn dark.
  4. Pour in the bone broth, bring to the boil once, then simmer gently, covered, over a low heat until the vegetables are tender.
  5. Season to taste with black pepper and stir in the parsley.
  6. Serve hot in deep bowls and finish with a little extra parsley if you like.

Good to know

A stew like this is pure comfort. Warm, clear and still full of flavour. Just right when you want something simple and satisfying.

Swaps

Beef bone broth → chicken bone broth (milder in flavour, also gelatine-rich) Ghee → grass-fed butter or beef dripping (no seed oils, full-bodied) Carrots → celeriac or courgette (fewer carbohydrates) Red onion → leek or shallot (milder, aromatic)

Allergens

Contains milk components from the ghee; celery is one of the allergens that must be declared, and for children or during pregnancy, a thoroughly boiled, hygienically prepared broth is the safe choice.

Frequently asked questions

What's in bone broth besides protein?

Mainly minerals such as sodium and potassium, but the exact content varies a lot, especially with homemade broth.

Why are carrots interesting in this stew, nutritionally?

Carrots provide beta-carotene, a precursor of vitamin A, plus some fibre. They also bring a gentle sweetness to the broth.

Is celery always a good choice for sensitive people?

Not necessarily. Celery can cause bloating in sensitive people and is also an important allergen that must be taken seriously.

What's special about garlic and onion?

Both contain sulphur compounds. They give the stew its savoury depth, but can also cause discomfort with a sensitive gut.

Does parsley bring more than just freshness?

Yes, parsley provides vitamin K, vitamin C and some polyphenols, among others. The amount used is usually small, but it rounds off the dish nicely.
