Ingredients
100g mixed berries
250ml almond milk
1 tbsp chia seeds
1 tbsp yacon syrup
1 tbsp coconut oil
Method
You’ll need: blender
Ideally use frozen berries – that way the smoothie turns out cold.
Put the berries, almond milk, chia seeds, yacon syrup and melted coconut oil in the blender.
Blend everything on the highest setting for about 1 min, until no pieces are left.
Let the smoothie stand in the blender for 3 min so the chia seeds can swell.
Pour it into a tall glass and drink it straight away.
Good to know
Lots of blended drinks are hidden sugar traps. This berry drink relies on chia seeds and coconut oil instead.
Swaps
Less sweet: halve the yacon syrup and round it off with cinnamon, vanilla or a few berries.
Cooking tips
If you don't have melted coconut oil, you can briefly melt it over a pan of hot water or in the microwave before it goes into the blender.
Storage
Drinks with chia seeds thicken a lot as they stand. If you drink it later, you may need to add a little water.
Allergens
Contains tree nuts (almonds). Completely vegan and gluten-free.
