Low-carb beef fillet with celeriac purée and mushrooms
Low-carb beef fillet with celeriac purée and mushrooms: tender beef fillet, creamy celeriac and fried king oyster mushrooms for a refined, low-carb dish.
Peel the celeriac, dice it and boil it in water until soft. Meanwhile, slice the king oyster mushrooms lengthways.
Heat olive oil in a frying pan and sear the beef fillet on both sides over a high heat. In pregnancy, cook the fillet right through. Take it out of the pan and leave it to rest briefly.
Fry the king oyster mushrooms in a second frying pan with olive oil until golden brown. Season them lightly with salt and pepper.
Drain the celeriac and blend it with the almond milk, nutmeg, salt and pepper into a creamy purée. Taste the purée once more at the end.
Slice the beef fillet. Catch any juices that run out and pour them over the meat or into the purée if you like.
Arrange the celeriac purée on plates with the king oyster mushrooms and the beef fillet. Finish with a little pepper if you like.
Good to know
When you want something uncomplicated but special, this dish is just right. Lovely and warm, savoury and without any fuss. This is how I like low-carb best.
Swaps
Beef fillet → rump steak (a little cheaper, similar protein content) | almond milk → unsweetened coconut milk (creamier) | king oyster mushrooms → button mushrooms (also contain fibre) | olive oil → ghee (heat-stable for searing, adds a buttery flavour; contains milk)
Allergens
Contains tree nuts (almond milk) and celery. Season it mildly for children; in pregnancy the dish is suitable if the beef fillet is cooked right through before serving.
