Low-carb asparagus and turkey breast rolls
Low-carb asparagus and turkey breast rolls made with green asparagus, turkey breast, parmesan, olive oil and lemon – a quick oven dish with plenty of protein and few carbs.
Preheat the oven to 200 °C (180 °C fan) and line a baking tray with baking paper.
Cut the woody ends off the asparagus and toss the spears with the olive oil and a little pepper.
Wrap the turkey breast around the asparagus and lay the rolls side by side on the tray.
Sprinkle the rolls with parmesan and bake at 200 °C for 12–15 min, until the asparagus is cooked and the turkey breast looks lightly browned.
Take the rolls out of the oven and leave to rest briefly so the parmesan firms up a little.
Arrange the asparagus and turkey breast rolls on plates and drizzle with a little lemon juice to serve.
Good to know
When it should be simple but still a bit special, these rolls are just right. They need hardly any effort and still look really elegant on the plate.
Swaps
Turkey breast → chicken breast (similar protein content, often a little juicier) | Parmesan → pecorino made from sheep's milk (strong flavour, also provides protein and calcium) | Asparagus → courgette strips (milder, a little more watery, also low in carbs) | Olive oil → ghee (heat-stable and aromatic; contains milk)
Allergens
Contains milk from the parmesan. Generally suitable for children if the asparagus is well cooked and mildly seasoned, and in pregnancy it's important that the turkey breast is cooked right through.
