Ingredients
- 500 g green asparagus
- 300 g wild salmon fillet
- 1 unwaxed lemon
- 2 tbsp olive oil
- 1 clove of garlic
- 1 bunch of dill
Method
You’ll need: frying pan · chopping board · knife · spatula
- Wash the green asparagus, snap off the woody ends and pat the salmon dry. Pull out any bones and cut the fillet into rough pieces or leave it whole.
- Finely chop the garlic. Heat the olive oil in a large frying pan and briefly sweat the garlic until fragrant.
- Add the asparagus to the pan and fry over a medium to high heat until lightly browned but still with some bite. Turn it now and then.
- Lay the salmon next to the asparagus and reduce the heat. Cover the pan and cook everything gently until the salmon is cooked through and still juicy.
- Chop the dill and halve the lemon. Get both ready while the fish and asparagus finish cooking.
- Arrange the asparagus and salmon, drizzle with lemon juice and sprinkle with dill. Season with a little salt and pepper if you like.
