Low-carb asparagus salad with radishes and apple cider vinegar dressing
Low-carb asparagus salad with radishes and apple cider vinegar dressing: a fresh salad with green asparagus, rocket, radishes, mustard, lemon and olive oil.
Wash the green asparagus, snap off the woody ends and cut into pieces. Blanch briefly in gently boiling water, then drain well.
Wash the radishes, remove the leaves and slice finely. Wash the rocket and spin it thoroughly dry.
For the dressing, stir the olive oil, apple cider vinegar, mustard, lemon juice and salt together in a small bowl until smooth.
Put the green asparagus, radishes and rocket in a bowl. Pour the dressing over and toss everything gently.
Leave the salad for a moment so the flavours come together. Season with a little lemon juice or salt if needed.
Serve lukewarm and enjoy straight away.
Good to know
A salad like this feels light without being boring. Crunchy, fresh and just right when you want something simple that still feels a bit special.
Swaps
Rocket → lamb's lettuce (milder flavour, also provides folate). Radishes → kohlrabi (a little gentler in flavour, adds fibre). Apple cider vinegar → lemon juice (fresh acidity, provides vitamin C). Mustard → tahini (creamier, contains calcium and unsaturated fats).
Allergens
Mustard is an allergen that has to be declared. For children, season the salad more mildly and slice the radishes more finely if needed; during pregnancy, serve well-washed veg and prepare the salad fresh.
