Peel the white asparagus, cut off the woody ends and cook it in lightly salted water until just tender.
Lift the asparagus out of the water and let it cool briefly so it's easier to handle.
Wrap several asparagus spears at a time in the sliced turkey breast and lay the rolls in a baking dish greased with butter.
Grate the Gouda over the top and season everything with salt and pepper.
Bake the asparagus rolls in the oven at 200 °C (180 °C fan) for 10–15 min until the cheese has melted and turned golden brown.
Serve the low-carb asparagus rolls hot, straight from the oven.
Good to know
When it's asparagus season, things can be simple. These rolls are quick to make and do without any fuss. They taste best warm from the oven.
Swaps
Gouda → Alpine cheese (stronger flavour, also provides calcium) | butter → ghee (pure butterfat; contains milk) | sliced turkey breast → cooked chicken breast fillet, sliced (less processed)
Allergens
Contains milk (Gouda and butter); depending on the product, sliced turkey breast can contain additives. Usually fine for children; in pregnancy, make sure the turkey slices are heated until steaming hot and the cheese is made from pasteurised milk.
