You’ll need: waffle iron · mixing bowl

  1. Stir the almond flour, eggs and melted butter together in a bowl into a smooth batter.
  2. Fold in the vanilla and coconut sugar until everything is evenly mixed.
  3. Preheat the waffle iron well and grease it lightly if needed.
  4. Add the batter to the hot waffle iron in portions and close the lid.
  5. Cook the waffles until golden brown and slightly crisp on the outside.
  6. Serve warm, plain or with a little yoghurt, berries or a spoonful of nut butter.

Good to know

These waffles are simple, quick and really cosy. They smell warm straight from the iron and have a delicate, nutty note. Just the thing when you want something uncomplicated but still special.

Swaps

Butter → ghee (contains only traces of lactose and can take high heat); less sweet: halve the coconut sugar and round it off with cinnamon, vanilla or a few berries; vanilla → cinnamon (intense aroma without sugar); almond flour → hazelnut flour (similar carb content, nutty flavour)

Allergens

Contains egg, milk and almonds (tree nuts); for small children, serve only when well cooked and in a suitable texture; in pregnancy fine with fresh eggs that are cooked through.
