Method

You’ll need: air fryer · chopping board · knife

  1. Trim the radishes, cut off the leaves leaving a short stalk and halve any large ones.
  2. Mix the radishes with the olive oil, chopped rosemary, lightly crushed garlic and half the salt.
  3. Cook them at 190 °C for 13 to 15 minutes without preheating, shaking the basket twice, until browned and soft inside.
  4. Stir the low-fat quark with the yoghurt, finely snipped chives and remaining salt until creamy.
  5. Serve the warm radishes with the herb quark for dipping.

Good to know

Roasted radishes taste surprisingly like little fried potatoes: mild, slightly sweet and barely peppery any more. A good trick if you're cutting down on carbs.

Swaps

Radishes → cubes of kohlrabi (milder). Low-fat quark → skyr (firmer). Rosemary → thyme. Olive oil → avocado oil (heat-stable).

Cooking tips

Cut the pieces as evenly as possible so they all cook at the same time. You can add the leaves to a salad like rocket.
