Low-carb air fryer prawn and pineapple skewers with lime dip
Air fryer prawn and pineapple skewers with garlic and paprika, served with a lime and coriander skyr dip. A low-carb dinner with 39.5 g of protein and 281 kcal.
Pat the prawns dry and mix with the olive oil, crushed garlic, paprika and chilli flakes.
Cut the pineapple into cubes and the spring onions into 3 cm pieces, and thread everything alternately onto short skewers with the prawns.
Cook the skewers at 200 °C for 6 to 7 minutes without preheating, until the prawns are pink and firm.
Stir the skyr with the lime juice, a little lime zest, chopped coriander and salt to make a dip.
Serve the skewers hot with the lime dip.
Good to know
Sweet, spicy and cooked in seven minutes: prawns and pineapple are a well-practised team. In the air fryer, the pineapple caramelises at the edges without the prawns drying out.
Swaps
Prawns → cubes of cod (firmer, 2 minutes longer). Pineapple → mango (softer). Skyr → 3.5 % fat yoghurt (milder). Coriander → mint (for anyone who doesn't like coriander).
Cooking tips
Prawns quickly turn rubbery, so check after 6 minutes. Thaw frozen prawns overnight in the fridge and pat them dry well.
Storage
Best eaten fresh; cooked prawns keep for one day at most in the fridge.
Allergens
Contains crustaceans and milk; suitable for children, and in pregnancy cook the prawns right through.
