Ingredients

Method

You’ll need: air fryer · saucepan · chopping board · knife

  1. Pick the rosemary needles, finely chop them with the garlic and rub the lamb chops with half of the mixture, the olive oil and pepper.
  2. Trim the green beans and cook them in boiling salted water for 4 minutes, then refresh in cold water.
  3. Preheat the air fryer to 200 °C for 3 minutes, lay the lamb chops side by side in the basket and cook for 8 to 10 minutes, turning after 5 minutes. For pink meat, they should be 58 °C inside.
  4. Leave the lamb chops to rest, covered. Put the beans, cherry tomatoes and the rest of the rosemary and garlic in the basket and cook everything for 5 minutes at 200 °C.
  5. Salt the meat and veg, drizzle everything with lemon juice and serve straight away.

Good to know

Lamb chops are quick, but in a frying pan the fat spits everywhere. In the air fryer they get a crust and stay pink, and the veg carries on cooking in the same basket.

Swaps

Lamb chops → lamb loin (boneless, 1 minute less). Green beans → Tenderstem broccoli (crunchy bite). Rosemary → thyme (milder). Cherry tomatoes → pepper strips.

Cooking tips

Score the fat edge a few times so the lamb chops don't curl up. Two minutes of preheating is worth it here so the crust forms straight away.

Storage

Best eaten fresh; leftovers keep for a day in the fridge.

Allergens

Free from the 14 major allergens; suitable for children. In pregnancy, cook the meat right through to 70 °C.
