Method

You’ll need: air fryer · saucepan · blender · chopping board · knife

  1. Peel the celeriac, cut it into 1 cm slices and par-cook them in boiling salted water for 5 minutes. Pat the slices dry.
  2. Whisk the eggs in a shallow dish. Finely grind the almonds in a blender and mix them in a second dish with the grated parmesan and paprika.
  3. Dip the celeriac slices first in the egg, then in the almond and parmesan mixture, and press the coating on.
  4. Lay the schnitzels side by side in the basket, drizzle with the olive oil and cook in the air fryer at 190 °C for 12 minutes. Turn them after 6 minutes.
  5. Stir the mustard and chopped dill into the yoghurt and toss the rocket with the lemon juice.
  6. Serve the celeriac schnitzels with the rocket and dill yoghurt.

Good to know

Celeriac schnitzel is a classic of East German cooking, where it was coated in breadcrumbs and pan-fried. Here an almond and parmesan coating does the job, and the air fryer makes it crisp without deep-frying. Par-cooking keeps the celeriac soft inside.

Swaps

Almonds → hazelnuts. Parmesan → Alpine cheese (such as Gruyère). Natural yoghurt → skyr. Celeriac → kohlrabi (par-cook for just 3 minutes).

Cooking tips

Pat the slices really dry after par-cooking, or the coating won't stick. Slices of the same thickness cook evenly.

Storage

Coated schnitzels keep in the fridge for 2 days; crisp them up in the air fryer at 190 °C for 4 minutes.

Allergens

Vegetarian; contains celery, egg, milk, almonds and mustard. Gluten-free.
