Ingredients

Method

You’ll need: air fryer · chopping board · knife · grater

  1. Finely grate the onion and crush the garlic into it. Knead both with the beef mince, yoghurt, paprika, cumin, oregano, salt and pepper for 3 min into a smooth meat mixture.
  2. Place the meat mixture between two sheets of baking paper and roll it out 1 cm thin. Peel off the top sheet and roll the meat up tightly with the bottom sheet.
  3. Cook the roll in the air fryer at 180 °C for 25 min, until it's cooked right through. Leave it to rest for 5 min, remove the paper and slice the meat thinly.
  4. Finely shred the white cabbage and knead it with the cider vinegar, olive oil and salt for 2 min. Chop the parsley and mix it in.
  5. Mix the yoghurt with the crushed garlic clove. Slice the tomatoes and cucumber.
  6. Arrange the doner meat, cabbage salad, tomatoes and cucumber on plates, pour the yoghurt sauce over the top and sprinkle with chilli flakes.

Good to know

Baking paper doner is one of the big TikTok trends: roll the mince out flat, roll it up in the paper, cook it, slice it. We leave out the flatbread and serve it on a plate with white cabbage salad. It tastes like it's from the kebab shop, just without the rotating spit.

Swaps

Beef mince → lamb mince (stronger flavour) or turkey mince. White cabbage → red cabbage (more colourful). Yoghurt → skyr (more protein). Plate → wholemeal flatbread (if it doesn't need to be low-carb).

Cooking tips

Cool mince is easiest to roll out between baking paper. After resting, cut the meat crossways into thin slices with a sharp knife.

Storage

The cooked meat keeps for 2 days in the fridge and can be frozen in slices for 2 months; the cabbage salad keeps for 3 days.

Allergens

Contains milk; no gluten, egg or nuts. For children and in pregnancy, cook the mince right through.
